變形桿菌凝集血清 Proteus agglutination

變形桿菌屬（Proteus）也是腸桿菌科成員，現有5個種，普通變形桿菌、奇異變形桿菌、產黏變形桿菌、潘氏變形桿菌和豪氏變形桿菌。其中普通變形桿菌（P. vulgaris）和奇異變形桿菌（P. mirabilis）與臨床關系較為密切。
變形桿菌食物中毒是我國常見的食物中毒之一，引起食物中毒的變形桿菌主要是普通變形桿菌(P．vulgaris)和奇異變形桿菌(P．mirabikis)。過去，變形桿菌食物中毒還包括普羅威登斯菌屬(Providencid)中的雷氏普羅威登斯菌(P．rettgeri)及摩根菌屬(Morganella)中的摩氏摩根菌(M．morganii)食物中毒。普通變形桿菌、奇異變形桿菌分別有100多個血清型，雷氏普羅威登斯菌有93個血清型，摩氏摩根菌有75個血清型。變形桿菌屬于菌，一般不致病，需氧或兼性厭氧，其生長繁殖對營養要求不高，在4～7℃即可繁殖，屬低溫菌。因此，此菌可以在低溫儲存的食品中繁殖。變形桿菌對熱抵抗力不強，加熱55℃持續1h可被殺滅。
